Pani Puri Masala is a blend of spices that is used to make the tangy and spicy water used in Pani Puri, a popular Indian street food. The masala typically includes a mix of cumin, coriander, black salt, chaat masala, tamarind, and chili powder, though there are many variations.
Here's a simple recipe for making Pani Puri Masala at home:
- Ingredients:
- 1/4 cup cumin seeds
- 1/4 cup coriander seeds
- 1 tablespoon fennel seeds
- 1 tablespoon black pepper
- 1 tablespoon black salt
- 1 tablespoon chaat masala
- 1 tablespoon amchur (dried mango powder)
- 1 teaspoon chili powder
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- 1/2 teaspoon ginger powder
- 1/2 teaspoon hing (asafoetida) powder
Instructions:
- Toast the cumin seeds, coriander seeds, fennel seeds, and black pepper in a dry pan over medium heat until fragrant, about 2-3 minutes.
- Let the spices cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
- In a bowl, combine the ground spices with the remaining ingredients and mix well.
- Store the Pani Puri Masala in an airtight container in a cool, dry place for up to 6 months.
- To make the Pani (water) for Pani Puri, mix the Pani Puri Masala with water, lemon juice, and mint leaves to taste. The mixture should be tangy, spicy, and slightly sweet. Serve with crispy puris filled with potatoes, chickpeas, and chutney for a delicious and refreshing snack.
